Serves: 4
For the Sardines sauce:
  • 1 tbsp olive oil
  • ½ onion (chopped)
  • 1 chopped tomato
  • 1 tsp lemon zest
  • 1 can sardines (in olive oil)
  • 1 tbsp lemon juice
  • 1 tsp salt
  • ½ tsp pepper
  • ⅛ cup chopped parsley
For the pasta:
  • 1 liter water
  • ½ lb Angel hair pasta
  • 1 tsp salt
  1. Boil water with salt in a pot.
  2. In a separate pan or wok, heat the olive oil.
  3. Add the chopped onion, and cook until translucent.
  4. Add the chopped tomato and lemon zest.
  5. Add the sardines (including the olive oil from can).
  6. Mix all the ingredients.
  7. Reduce the heat to low then cook the pasta.
  8. Add the pasta in boiling water. (In this recipe, I used Angel hair pasta so will cook for just 4 minutes).
  9. Turn the heat back to medium-high then add the pasta to the sardines sauce.
  10. Add the lemon juice, salt, and pepper.
  11. Lastly, add the chopped fresh parsley.
  12. Transfer to plate and serve.
