Add the shrimp paste. Around 2 tablespoons.BicolExpress07

Return heat back to medium and stir continuously until sauce is reduce and the consistency becomes thick.BicolExpress16BicolExpress17BicolExpress18

Place on a bowl, garnish with chopped green onions and serve with rice.BicolExpress19

Ingredients
  • 1 lb pork belly cut into bite size
  • ½ onion (sliced)
  • ¼ cup chopped chili
  • 2 tbsp shrimp paste
  • 1 can 11oz coconut milk
Instructions
  1. In a medium size pot, add the pork belly and cook until golden brown.
  2. When golden brown and the pork has rendered its fat, add the onion and cook until translucent
  3. Add the chili and shrimp paste. Mix until combined.
  4. Add the coconut milk, stir and bring to boil.
  5. Turn heat to low and simmer for 1 hour.
  6. Return heat back to medium and stir continuously until sauce is reduce and has thickened.
  7. Place on a bowl, garnish with some chopped green onions and serve with rice.
Notes
Shrimp paste is available from most Asian markets or in the ethnic food aisle of a well-stocked supermarket.
