Roasted Chicken and Potatoes

What you need: chicken legs, potatoes, italian seasoning, lemon, olive oil, cloves of garlic, salt and pepper.

First marinade the chicken in a large bowl with lemon, olive oil, italian seasoning, salt and pepper for minimum of 1 hour.

Preheat the oven to 425F and prepare the potatoes. In a baking dish, season the potatoes with olive oil, salt and pepper.

Arrange the marinated chicken and the unpeeled cloves of garlic in the roasting dish.

Bake in the oven for 1 hour.

Serve while hot.

Ingredients
  • 4 chicken legs
  • 2-3 large potatoes, cut into cubes
  • 1 tbsp Italian seasoning
  • 1 lemon
  • 4 tbsp olive oil
  • 4 cloves of garlic
  • salt and pepper, to taste
Instructions
  1. In large bowl, marinade the chicken with juice of a lemon, olive oil, italian seasoning, salt and pepper for minimum of 1 hour.
  2. Preheat the oven to 425F.
  3. In a roasting dish, season the potatoes with the remaining olive oil, salt and pepper.
  4. Arrange the marinated chicken and the unpeeled cloves of garlic in the roasting dish.
  5. Bake in the preheated oven for 1 hour.
  6. Serve while hot.
